A soft, slightly sweet focaccia-style bread with a golden crust, inspired by Lord of the Rings.

Wrap cooled bread in parchment or banana leaves and store in an airtight container in the fridge for 3-4 days. Can be frozen up to one month.
Whisk the warm water and sugar in the bowl of a stand mixer, sprinkle the yeast over the surface, and let it develop for 15 minutes or until foamy.
In a separate bowl, whisk together the flour, salt, and Italian seasoning.
Slowly add the dry ingredients to the stand mixer on medium speed and continue to stir about 10 minutes until a thick, sticky dough forms.
Cover the dough and let it rest 15 minutes.
Grease a baking sheet with olive oil and optionally spray with cooking oil. Pour the dough onto the baking sheet—do not roll or knead.
Drizzle olive oil over the top and use your fingertips to press divots into the dough. Tilt the pan to help the dough reach about 1/2 inch from the edges.
Cover with plastic wrap greased with cooking spray and let the dough rise in a warm spot until doubled in size, about 90 minutes or longer if cool.
Preheat the oven to 375°F. Sprinkle additional Italian seasoning on top as desired.
Bake 20 to 30 minutes, checking after 20 minutes every 5 minutes, until the focaccia is puffed and pale golden around the edges and pulling away from the pan.
Let cool on the pan on a cooling rack for 30 minutes, then lift from the pan and finish cooling on the rack.
Finish with Fleur de Sel mixed with Italian seasoning and serve with butter, jam, or as desired.
