Big Mac Salad

Low-carb, gluten-free salad inspired by a Big Mac, served with a homemade Special Sauce-style dressing. Makes about 6 servings and is good for meal prep.


To meal prep: add toppings to the bottom of individual containers, top with lettuce, seal, and pack dressing separately. Dress and toss just before eating. Estimated nutrition in source includes entire dressing.

Special Sauce Salad Dressing

Ingredients

  • 1 cups mayonnaise
  • 1/4 cups French dressing could use ketchup
  • 2 tablespoons minced pickles
  • 2 tablespoons minced white onion could use red onion
  • 1 tablespoon distilled white vinegar

Preparation

  1. Add the dressing ingredients to a small mixing bowl, whisk to combine, and set aside. Dressing can be made several days ahead and improves as it sits.

Ingredients

  • 1 pound lean ground beef
  • Worcestershire sauce add a few dashes while cooking
  • homemade seasoned salt to taste
  • black pepper to taste
  • 3 heads romaine lettuce chopped and washed
  • 1 red onion thinly sliced; white onion may be used instead
  • cheddar cheese freshly shredded recommended
  • 3 Roma tomatoes could use cherry, grape, or vine-ripened tomatoes
  • 1/2 cup dill pickles chopped
  • sesame seeds optional, for garnish

Preparation

  1. Heat a large skillet over medium-high heat, add the ground beef, and let it sear undisturbed until the bottom is browned.
  2. Add a few dashes of Worcestershire sauce, season with homemade seasoned salt and pepper, and sauté until the beef is cooked through.
  3. Scoop the browned beef onto a paper towel-lined plate to drain and cool slightly.
  4. Divide chopped romaine among plates or bowls. Top with the cooked ground beef, sliced red onion, shredded cheddar, chopped tomatoes, and chopped dill pickles.
  5. Drizzle with Special Sauce Salad Dressing, sprinkle sesame seeds if using, and serve.
