Garlic Tomato Bruschetta

SO yummy when spooned on top of whipped ricotta or whipped feta, drizzled with balsamic reduction, and a bit of flaky sea salt.

Ingredients

  • 1/4 cups olive oil
  • 3 tablespoons chopped fresh basil
  • 3-4 garlic cloves minced
  • 4 tomatoes medium, diced
  • 2 tablespoons fresh grated Parmesan cheese loaf
  • unsliced french bread

Preparation

  1. In a bowl combine the first 5 ingredients. Add tomatoes and toss gently. Sprinkle with cheese.
  2. Refrigerate for at least 60 minutes.
  3. Bring to room temperature before serving.
  4. Cut bread and toast under broiler until lightly browned.
  5. Top with tomato mixture and serve immediately.
