Cake

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 3/4 cup butter, softened
  • 3 eggs room temperature
  • 15 oz ricotta cheese
  • 1 lemon, juiced and zested
  • 1 teaspoon lemon extract
  • 1/2 teaspoon vanilla extract

Preparation

  1. Preheat oven to 350 degrees F. Grease and flour cake pan.
  2. In a bowl combine flour, baking powder, baking soda and salt. Set aside.
  3. Cream butter and sugar until light. Add eggs - one at a time. Beat until well combined.
  4. Beat in ricotta, lemon juice and zest, and extracts until well blended.
  5. Add dry ingredients and mix until combined. Bake for 40-50 minutes until a toothpick comes clean.
  6. Let cake cool ~10 minutes before inverting. Fully cool before glazing.

Glaze

Ingredients

  • 1 cup icing sugar
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon zest

Preparation

  1. Mix all together. Add more lemon or more sugar to get desired consistency. Drizzle!
