Baked Potato Wedges

Ingredients

  • 2 pounds russet potatoes cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon salt
  • 3/4 teaspoon onion powder
  • 3/4 teaspoon paprika
  • pepper, to preference
  • fresh parsley chopped for garnish

Preparation

  1. Peel (or not) potatoes, cut into wedges, rinse with water and let fully air dry.
  2. Preheat oven to 425°F.
  3. Mix seasonings. Toss cut potatoes with olive oil and about half of the seasoning mix.
  4. Spread potatoes evenly on a baking sheet. Sprinkle with the rest of the seasoning.
  5. Roast 40 to 45 minutes until potatoes are tender and golden brown, turning once halfway through.
  6. Serve immediately, garnish with fresh parsley and/or Parmesan cheese (optional). Good with garlic aioli.
