Brown Butter Cookie Dough
Ingredients
- 1 cups brown sugar
- 1/2 cups white sugar
- 1 cups unsalted browned butter
- 2 eggs room temp
- 2 teaspoons vanilla bean paste
- 2 cups all-purpose flour
- 3/4 teaspoons baking soda
- 1/4 teaspoons baking powder
- 1/4 teaspoons salt
- 2 cups semi-sweet chocolate chopped or chips
Preparation
- Brown butter and let cool slightly.
- Whisk sugars with the browned butter until glossy, then add eggs and vanilla.
- Sift in the dry ingredients until just combined, then fold in chocolate.
- Chill for at least 1 hour.
Brownie Batter
Ingredients
- 1/2 cups salted butter melted
- 2 tablespoons olive oil
- 2 eggs
- 3/4 cups all-purpose flour
- 1/2 cups brown sugar
- 1/4 cups white sugar combined with brown sugar as listed
- 1 teaspoons vanilla
- 1 cups chocolate chips melted
- 1/4 cups cocoa powder
Preparation
- Preheat oven to 350°F (175°C) and line an 8x8 pan with parchment.
- Melt butter with chocolate chips, whisk in olive oil and cocoa powder.
- In another bowl, whisk sugars, eggs, and vanilla.
- Combine with chocolate mixture, then fold in flour until just mixed.
Assembly and Bake
Ingredients
- 1 brownie batter from Brownie Batter section
- cookie dough pieces from Brown Butter Cookie Dough section, chunks to distribute across surface
- 3 ounces semi-sweet chocolate chunks
Preparation
- Pour half the brownie batter into the pan and spread evenly.
- Add chunks of cookie dough across the surface without covering fully.
- Pour remaining brownie batter over top, then finish with more cookie dough pieces pressed lightly on top.
- Lastly, top with the chocolate chunks to your liking.
- Bake for 30 to 40 minutes, until edges are set and center is slightly soft. A toothpick should come out with moist crumbs, not wet batter.
- Cool completely before slicing to achieve clean layers.
