Quick and easy sandwich loaf using sourdough discard and a small amount of instant yeast for a fast rise. Soft, airy crumb and soft crust. Egg free; butter optional.

Total Time

Can substitute honey for sugar by weight, or use oil or vegan butter instead of butter. For a faster rise use warm water. Store cooled loaf in a ziplock bag for 24-48 hours or freeze uncut up to 3 months.

Ingredients

Preparation

Combine sourdough discard, water and flour in the bowl of a stand mixer or Thermomix and mix until a shaggy dough forms (about 30 seconds).

Leave the dough to rest for 30 minutes.

Add salt, sugar, butter and instant yeast to the bowl and knead with a dough hook for about 3 to 6 minutes, until the dough is elastic and silky.

Leave the dough to rise in a warm place until doubled, about 1 hour depending on temperature.

Lightly butter a loaf pan.

Tip the dough onto the counter with the smooth side underneath and gently ease it into a rectangle.

Fold the short sides into the middle and roll the dough into a tight log with the seam underneath, creating surface tension.

Place the shaped dough into the prepared loaf tin and cover lightly. Proof until just above the rim of the tin, about 1 hour depending on temperature.

Preheat oven to 180C/350F and warm for 10 to 15 minutes.

Spray the top of the dough with water mist and bake at 180C/350F for 40 to 45 minutes, until golden brown and the loaf sounds hollow when tapped.

Remove from pan and cool on a wire rack. Optionally brush top with melted butter for a softer crust.
