Ingredients
- 1 pound Italian sausage
- basil or parsley fresh
- 4 cloves garlic
- 1 onion small
- 2 cups spinach fresh
- 12 lasagna noodles regular or gluten-free
- 6 tablespoons all-purpose flour
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg ground
- 1 teaspoon salt
- 2 tablespoons olive oil
- 6 tablespoons butter unsalted
- 3 cups mozzarella cheese
- 1 cup parmesan cheese grated
- 2 cups ricotta cheese
- 4 cups whole milk
Preparation
- Cook Italian sausage in a skillet until browned; drain excess fat.
- If using, chop basil or parsley and set aside.
- Mince garlic and finely chop the small onion.
- Sauté onion and garlic in olive oil and some butter until translucent.
- Add spinach and cook until wilted; set aside.
- Preheat oven while assembling lasagna.
- Boil lasagna noodles according to package directions; drain and lay flat.
- Make white sauce: melt butter in a saucepan, whisk in all-purpose flour and cook briefly to form a roux. Gradually whisk in whole milk until smooth and thickened. Season with salt, black pepper, and ground nutmeg.
- Layer a baking dish with a thin layer of white sauce, noodles, ricotta, cooked sausage, spinach mixture, mozzarella, and parmesan. Repeat layers, finishing with sauce and remaining mozzarella and parmesan.
- Bake until bubbly and cheese is melted and lightly golden. Let rest before serving.
