Ingredients

  • 3 tablespoons olive oil
  • 1/2 yellow onion chopped
  • 2 cloves garlic minced
  • 8 cups low sodium chicken broth vegetable broth fine too
  • 1 teaspoon kosher salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon black pepper or to taste
  • 1/2 head cabbage chopped in 1 1/2" chunks
  • 4 carrots peeled and chopped
  • 2 stalks celery sliced thinly
  • 14 1/2 ounces stewed tomatoes
  • cannellini or other white beans optional, added as variation
  • kielbasa or sausage optional, added as variation

Preparation

  1. In a large pot over medium heat add the olive oil, then add the chopped onion and minced garlic and cook until the onions are translucent, about 3 to 5 minutes.
  2. Add the broth, salt, pepper, chopped cabbage, carrots, sliced celery, and stewed tomatoes and simmer for 30 minutes.
  3. Adjust seasoning and add optional ingredients (beans, kielbasa, leafy greens) as desired.
