The perfect easy Easter dessert! Rich and velvety no-bake cheesecake speckled with crushed Cadbury Mini Eggs on a graham cracker crust. Top with chocolate ganache and chocolate whipped cream nests.
Graham Cracker Crust
Ingredients
- 2 cups graham cracker crumbs about 15 full sheets; 240g
- 1/3 cup light brown sugar, packed
- 1/2 cup unsalted butter, melted
Preparation
- Mix graham cracker crumbs, packed light brown sugar, and melted butter; press into a springform or pie pan to form crust.
Cheesecake Filling
Ingredients
- 1 cup Cadbury Mini Eggs 8oz; 215g
- 1 1/4 cups heavy whipping cream cold; 300ml
- 24 ounces cream cheese full-fat brick-style, room temperature (not the spread); 678g
- 1/2 cup granulated sugar 100g
- 2 tablespoons powdered sugar
- 1/4 cup sour cream room temperature; 60g
- 1 teaspoon pure vanilla extract
Preparation
- Beat cream cheese until smooth, add granulated sugar and powdered sugar and beat until combined.
- Fold in sour cream and vanilla.
- Whip the cold heavy whipping cream to stiff peaks and fold into the cream cheese mixture.
- Gently fold in the 1 cup of Cadbury Mini Eggs (reserve extra for topping).
- Spread filling over prepared crust and chill as directed.
Chocolate Ganache
Ingredients
- 1/2 cup semi-sweet chocolate chips 93g
- 1/2 cup heavy whipping cream 120ml
Preparation
- Heat the heavy cream until just simmering, pour over chocolate chips, let sit a minute then stir until smooth to make ganache.
- Cool slightly before pouring over the chilled cheesecake.
Chocolate Whipped Cream
Ingredients
- 1/2 cup heavy whipping cream 120ml
- 2 tablespoons granulated sugar
- 2 tablespoons unsweetened cocoa powder regular or Dutch processed
- 1/4 teaspoon pure vanilla extract
- 36 Cadbury Mini Eggs about 4.5 oz; for decorating (36 eggs)
Preparation
- Whip heavy cream with granulated sugar, cocoa powder, and vanilla until soft to medium peaks to create chocolate whipped cream nests for topping.
Assembly
Preparation
- Pour ganache over chilled cheesecake and spread to the edges.
- Pipe or spoon chocolate whipped cream onto the top to form nests and place reserved Cadbury Mini Eggs on top for decoration.
- Chill until set before serving.
