Ingredients

  • 6 pound chuck roast
  • 2 Tbsp olive oil
  • 1 celery finely chopped
  • 1 onion finely chopped
  • 1/2 cup mushrooms finely chopped
  • 12 oz white wine
  • 1 tsp marjoram dried
  • 1/2 tsp rosemary dried
  • ground pepper freshly ground, to taste
  • salt to taste

Preparation

  1. In large skillet, brown roast on all sides in olive oil.
  2. Place roast in slow cooker.
  3. Sprinkle chopped celery, chopped onion, and mushrooms over and around roast.
  4. Pour white wine over all. Sprinkle marjoram, rosemary, and pepper over meat and vegetables.
  5. Cover and cook on Low for 8-10 hours. Roast should be tender and wanting to fall apart.
  6. Remove roast from slow cooker and let it stand on a cutting board for 20 minutes before slicing and serving with pan juices.
