Dressing

Ingredients

  • 1/2 cups oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoons fresh lemon juice
  • 2 teaspoons sugar
  • 1/2 teaspoons salt
  • 1/2 teaspoons dry mustard
  • 1 garlic clove crushed

Preparation

  1. Combine dressing ingredients in a jar and shake to blend.

Salad

Ingredients

  • 2 tablespoons butter
  • 1/2 cups sunflower seeds, shelled
  • 1/2 cups slivered almonds
  • 1 leaf lettuce
  • 2 green onions finely chopped
  • 2 mandarin oranges peeled (or 10 oz can, drained)
  • 1 ripe avocado peeled and sliced

Preparation

  1. Heat butter in a frying pan and sauté sunflower seeds and almonds until golden brown. Remove from pan and set aside to cool.
  2. Prepare remaining ingredients and combine in a bowl.
  3. Add cooled seeds and almonds and toss with dressing just before serving.
