Ethiopian Lentils (Misir Wot)

Ingredients

  • 1 cup red lentils rinsed
  • 1 onion chopped
  • 2 garlic minced (about 2 cloves)
  • 1 tbsp tomato paste
  • 3 cups water or broth
  • 1 tsp paprika
  • 1 tbsp oil
  • salt

Preparation

  1. Chop onion and garlic.
  2. Rinse lentils in colander.
  3. Heat up the oil in a pan. Add in the onion and garlic and cook until soft.
  4. Add the tomato paste and paprika. Stir.
  5. Add lentils and the water. Bring to a boil.
  6. Reduce the heat and simmer 15-20 minutes.
  7. Stir often so it doesn't stick.
