Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup water
  • 1/2 cup sourdough discard
  • 1 tablespoon honey
  • corn meal handful

Preparation

  1. Add the flour, baking soda, and salt to a large bowl and mix.
  2. Add water, sourdough discard, and honey and mix until it all comes together.
  3. Knead the dough for about a minute.
  4. Roll out the dough on a lightly floured surface until it is about 1/2 inch thick.
  5. Use a round cookie cutter, or the top of a cup to cut circles in your dough. It should make about 12 muffins.
  6. Heat a large cast iron to medium low heat and sprinkle the bottom of the pan with corn meal to prevent the muffins from sticking. Cook about 7min per side.
