Copycat Starbucks banana bread, adapted from Starbucks; can omit walnuts or substitute chocolate chips.
If bananas are not very ripe, place them in a brown paper bag for a day or two or roast at 300°F for 30 minutes then cool. Freeze cooled bread wrapped tightly in plastic and placed in a freezer bag.
Preheat oven to 325 degrees F.
Add flour, baking soda, and salt to a small bowl and set aside.
Mix egg, sugar, and oil and stir until well combined.
Add the dry ingredients to the wet and stir well; the mixture will be thick and dry.
Add milk, vanilla, and mashed bananas and stir until incorporated.
Mix in walnuts (or chocolate chips) and pour into a loaf pan (see notes if using smaller pan).
Bake 50 to 75 minutes, checking regularly, until a knife inserted comes out clean.
