Copycat Starbucks Banana Bread

Copycat Starbucks banana bread, adapted from Starbucks; can omit walnuts or substitute chocolate chips.


If bananas are not very ripe, place them in a brown paper bag for a day or two or roast at 300°F for 30 minutes then cool. Freeze cooled bread wrapped tightly in plastic and placed in a freezer bag.

Ingredients

  • 2 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 egg
  • 1 1/8 cup sugar
  • 1/2 cup vegetable oil or canola oil
  • 2 tablespoon buttermilk or milk
  • 1/2 teaspoon vanilla
  • 3 bananas mashed very well; use super ripe or slightly brown bananas for best flavor
  • 1/2 cup walnuts chopped (optional)

Preparation

  1. Preheat oven to 325 degrees F.
  2. Add flour, baking soda, and salt to a small bowl and set aside.
  3. Mix egg, sugar, and oil and stir until well combined.
  4. Add the dry ingredients to the wet and stir well; the mixture will be thick and dry.
  5. Add milk, vanilla, and mashed bananas and stir until incorporated.
  6. Mix in walnuts (or chocolate chips) and pour into a loaf pan (see notes if using smaller pan).
  7. Bake 50 to 75 minutes, checking regularly, until a knife inserted comes out clean.
