Ingredients

  • fat for greasing the pan
  • Grain-Free Flour Mix 210 grams
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground cinnamon
  • 2 eggs large
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil melted; about 80 grams
  • 1 teaspoon vanilla extract
  • 3 bananas ripe, mashed
  • 1 cup hazelnuts chopped; about 75 grams

Preparation

  1. Prepare to bake. Preheat the oven to 375°F. Grease a 5 x 9-inch loaf pan with the fat of your choice.
  2. Mix the dry ingredients. In a bowl, whisk together the flour mix, baking soda, salt, and cinnamon.
  3. Combine the wet ingredients. In another bowl, stir together the eggs, maple syrup, oil, and vanilla. Add the mashed banana and whisk until everything is combined well.
  4. Make the batter. Add the dry ingredients, stirring as you go, a bit at a time to the wet ingredients. When all the flour has disappeared into the batter, and you can't find any more hiding at the bottom of the bowl, add the hazelnuts and stir.
  5. Bake the banana bread. Pour the banana bread batter into the greased pan. Bake until the banana bread is springy to the touch, the edges are pulling away from the pan, and the top is browned, 45 to 60 minutes.
