Greek - Lemon Roasted Potatoes

Greek lemon roasted potatoes with oregano and garlic, sauce options for quick or long preparation.

Ingredients

  • 4 pounds potatoes peeled and cut into quarters or sixths depending on size
  • olive oil
  • 1/3 cups fresh lemon juice
  • salt and pepper
  • 2 tablespoons oregano
  • 1 clove garlic crushed, 1 clove
  • chicken stock

Preparation

  1. Short-cut method: Parboil the potatoes in chicken stock for 10 minutes.
  2. Drain and cool a bit on roasting pan in one layer drizzled with olive oil.
  3. Mix ingredients with potatoes.
  4. When ready to roast, drizzle top of potatoes with olive oil.
  5. Roast at 350 degrees Fahrenheit for about 30 minutes to reach a nice red brown color.
  6. Long method: In roasting pan, toss potatoes and all ingredients except stock.
  7. Marinate.
  8. Add enough stock so the potatoes are half covered.
  9. Cover pan with foil and bake about 40 minutes at 350 degrees Fahrenheit.
  10. Check for tenderness and return to oven if not tender.
  11. Add liquid if you need more to cover bottom and prevent sticking.
  12. When almost done increase to 400 degrees Fahrenheit.
  13. Remove foil and bake another 20 to 30 minutes to a nice red brown color.
