Ingredients
- leg of lamb or shoulder of lamb or other meaty cut washed and dried, with garlic inserted in small slits
- 5 tablespoons olive oil
- lemon juice mixed with oil for drizzle
- garlic
- parsley
- oregano
- cumin
- rosemary
- salt and pepper
- 1/2 pounds feta cheese sliced thickly
Preparation
- Wash and dry lamb.
- Insert garlic in small slits.
- Salt and pepper and sprinkle generously with herbs and spices.
- Mix oil and lemon juice and drizzle over the lamb.
- Cover and marinate for 3 hours or more.
- Preheat oven to 300 degrees Fahrenheit.
- Spread out sheet of parchment paper or waxed paper and rub with oil.
- Lay marinated meat on paper and arrange cheese on top.
- Wrap tightly in paper and then wrap once more in aluminum foil and seal.
- Place in shallow pan and bake 2 to 3 hours.
- Meat should fall off bone.
- A 5 pound leg roasted for 5 hours is very tender and may be pink inside.
