A Greek lamb dish with herbs, spices and feta cheese baked to tender perfection.

Ingredients

  • leg of lamb or shoulder of lamb or other meaty cut washed and dried, with garlic inserted in small slits
  • 5 tablespoons olive oil
  • lemon juice mixed with oil for drizzle
  • garlic
  • parsley
  • oregano
  • cumin
  • rosemary
  • salt and pepper
  • 1/2 pounds feta cheese sliced thickly

Preparation

  1. Wash and dry lamb.
  2. Insert garlic in small slits.
  3. Salt and pepper and sprinkle generously with herbs and spices.
  4. Mix oil and lemon juice and drizzle over the lamb.
  5. Cover and marinate for 3 hours or more.
  6. Preheat oven to 300 degrees Fahrenheit.
  7. Spread out sheet of parchment paper or waxed paper and rub with oil.
  8. Lay marinated meat on paper and arrange cheese on top.
  9. Wrap tightly in paper and then wrap once more in aluminum foil and seal.
  10. Place in shallow pan and bake 2 to 3 hours.
  11. Meat should fall off bone.
  12. A 5 pound leg roasted for 5 hours is very tender and may be pink inside.
