Ingredients
- 2 cups rice
- green pepper - cups chopped
- red pepper - cups chopped
- onion - cups chopped
- celery - cups chopped
- 2 tablespoons parsley minced
- 1 clove garlic minced, 1 clove
- olive oil
- chicken stock or vegetable stock
- salt
- pepper
- oregano, thyme and cumin dash
Preparation
- In large pot heat the oil.
- Lightly sauté the peppers, onion, celery, parsley and garlic.
- Add the rice and sauté together for a few minutes.
- Add spices and cover with stock.
- Cook until rice is done.
- You want light and fluffy, but not dry, so when almost done take the pot off the heat, and cover tightly, letting the rice absorb the liquid.
