Greek - Aegean Pilaf

A traditional Greek pilaf with fresh vegetables and aromatic herbs.

Ingredients

  • 2 cups rice
  • green pepper - cups chopped
  • red pepper - cups chopped
  • onion - cups chopped
  • celery - cups chopped
  • 2 tablespoons parsley minced
  • 1 clove garlic minced, 1 clove
  • olive oil
  • chicken stock or vegetable stock
  • salt
  • pepper
  • oregano, thyme and cumin dash

Preparation

  1. In large pot heat the oil.
  2. Lightly sauté the peppers, onion, celery, parsley and garlic.
  3. Add the rice and sauté together for a few minutes.
  4. Add spices and cover with stock.
  5. Cook until rice is done.
  6. You want light and fluffy, but not dry, so when almost done take the pot off the heat, and cover tightly, letting the rice absorb the liquid.
