A variation of a hot chicken Caesar salad featuring a flavorful dressing and sautéed vegetables.

Dressing and Salad Preparation

Ingredients

  • 2 eggs
  • 1 cup olive oil (or canola oil)
  • red wine vinegar
  • 2 teaspoon dry mustard
  • 4 teaspoon worchestshire
  • 3-4 garlic cloves
  • - cup parmesan cheese more is better
  • salt and pepper
  • romaine lettuce

Preparation

  1. Put everything in the blender! (I usually double this and keep it on reserve in the fridge)
  2. Toss over romaine lettuce and set aside.
  3. Put the salad together in this order: dressed lettuce, sautéed veggies, cheese, chicken, grated carrots, and more dressing.

Sautéed Vegetables and Chicken

Ingredients

  • 1 green pepper chopped
  • 1 red pepper chopped
  • 1 onion chopped
  • 3-4 mushrooms
  • salt and pepper to season
  • soy sauce for pouring on the veggies as they cook
  • 2 chicken breasts seasoned with seasoning salt, paprika, and optionally cayenne for spice, sautéed separately

Preparation

  1. Chop and sauté onion, peppers, and mushrooms in a little bit of oil. Season with salt and pepper and you can pour a little soy sauce on the veggies as they cook.
  2. Chop and season chicken with seasoning salt, paprika, and a bit of cayenne - if you like spice! If not, leave out the cayenne! Saute in a separate pan from the vegetables.
