Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 8 tablespoons unsalted butter softened
  • 1 cup sugar
  • 1 large egg
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup milk
  • 7 plums or peaches or any stone fruit pitted and quartered
  • 2 tablespoons sugar

Preparation

  1. Mix the dry ingredients in a bowl and set aside.
  2. Cream the butter, sugar, egg, and vanilla together to make a thick batter.
  3. Add in the dry ingredients and combine.
  4. Add in the milk last. Your batter will be rich and pale yellow.
  5. Pour into a greased 9-inch springform pan.
  6. Slice the plums and decorate the top with them, then sprinkle the remaining sugar on top.
  7. Bake in a preheated 350°F oven for 60-70 minutes.
  8. Let rest in the pan for 30 minutes, then run a knife around the sides and unmold.
