Ingredients

  • 1 banana ripe
  • 1/3 cup rolled oats
  • 1 egg large
  • 1 teaspoon chia seeds
  • 1/2 teaspoon vanilla
  • cinnamon sprinkle
  • yogurt of choice
  • fresh berries
  • nut butter for drizzling
  • honey for drizzling

Preparation

  1. Using a fork, mash the banana in a shallow bowl or plate.
  2. Add the remaining ingredients to the mashed banana and mix until combined.
  3. Grease a non-stick skillet with a little avocado or olive oil and warm over medium heat.
  4. Once warm, add the oatmeal mixture and cook until bubbles appear.
  5. Then using a spatula, flip and break the mixture into pieces.
  6. Serve with yogurt of choice, fresh berries, a drizzle of nut butter, honey and chia seeds.
