Ingredients
- 1 pound Italian sausage hot or sweet
- 1 cup onion coarsely chopped
- 2 cloves garlic sliced
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup dry red wine
- 16 ounces canned tomatoes
- 1 cup carrots thinly sliced
- 1 1/2 teaspoons fresh basil leaves
- 1 1/2 teaspoons oregano leaves
- 8 ounces tomato sauce
- 1/2 cup zucchini sliced
- 2 cups tortellini mini better
- 3 tablespoons fresh parsley
- 1 medium green pepper cut into pieces
- grated Parmesan cheese for serving
Preparation
- Remove casings from sausage, brown in a dutch oven, remove and drain all but 1 tablespoon of the drippings.
- Saute onions and garlic until onions are tender.
- Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil.
- Reduce heat, simmer uncovered for 30 minutes. Skim fat.
- Stir in the zucchini, parsley, tortellini, and green pepper. Simmer covered for 35-45 minutes, or until tortellini are tender.
- Optional: Sprinkle cheese on top of each serving.
