A hearty sausage soup with Italian sausage, vegetables, and tortellini.

Ingredients

  • 1 pound Italian sausage hot or sweet
  • 1 cup onion coarsely chopped
  • 2 cloves garlic sliced
  • 5 cups beef broth
  • 1/2 cup water
  • 1/2 cup dry red wine
  • 16 ounces canned tomatoes
  • 1 cup carrots thinly sliced
  • 1 1/2 teaspoons fresh basil leaves
  • 1 1/2 teaspoons oregano leaves
  • 8 ounces tomato sauce
  • 1/2 cup zucchini sliced
  • 2 cups tortellini mini better
  • 3 tablespoons fresh parsley
  • 1 medium green pepper cut into pieces
  • grated Parmesan cheese for serving

Preparation

  1. Remove casings from sausage, brown in a dutch oven, remove and drain all but 1 tablespoon of the drippings.
  2. Saute onions and garlic until onions are tender.
  3. Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil.
  4. Reduce heat, simmer uncovered for 30 minutes. Skim fat.
  5. Stir in the zucchini, parsley, tortellini, and green pepper. Simmer covered for 35-45 minutes, or until tortellini are tender.
  6. Optional: Sprinkle cheese on top of each serving.
