Oil-Free Coleslaw Dressing

Ingredients

  • 3/4 cups raw cashews
  • 1/2 tsp sea salt
  • 1/3 cup water
  • 1/4 cup rice vinegar
  • 3 tablespoons maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tsp celery seed

Preparation

  1. Soak cashews in warm water for up to an hour. Drain.
  2. Add all ingredients to a high-speed blender.
  3. Blend on high until smooth.
  4. Add to coleslaw mix, cover and chill or chill dressing alone and drizzle over a salad for a refreshing summertime side. Enjoy!
