Ingredients
- 3/4 cups raw cashews
- 1/2 tsp sea salt
- 1/3 cup water
- 1/4 cup rice vinegar
- 3 tablespoons maple syrup
- 2 tablespoons Dijon mustard
- 1 tsp celery seed
Preparation
- Soak cashews in warm water for up to an hour. Drain.
- Add all ingredients to a high-speed blender.
- Blend on high until smooth.
- Add to coleslaw mix, cover and chill or chill dressing alone and drizzle over a salad for a refreshing summertime side. Enjoy!
