Ingredients
- 3 onions chopped
- 1/4 cup olive oil for cooking
- 3 pound green tomatoes chopped very coarse
- 1 cup chicken broth
- 1 tablespoon garlic minced
- 3 tablespoons extra-virgin olive oil
- pepper freshly ground
- 1 cup feta crumbled
- 2 tablespoons dill fresh, chopped
Preparation
- Cook onion in olive oil over moderate heat, until tender.
- Add tomatoes, broth, garlic and cook until tomatoes are tender, about 10-12 minutes. Do not overcook.
- Stir in extra-virgin olive oil and season with salt and pepper.
- Transfer to shallow bowl and sprinkle with feta cheese and dill.
- Serve warm, or at room temperature.
