Ingredients

  • 3 onions chopped
  • 1/4 cup olive oil for cooking
  • 3 pound green tomatoes chopped very coarse
  • 1 cup chicken broth
  • 1 tablespoon garlic minced
  • 3 tablespoons extra-virgin olive oil
  • pepper freshly ground
  • 1 cup feta crumbled
  • 2 tablespoons dill fresh, chopped

Preparation

  1. Cook onion in olive oil over moderate heat, until tender.
  2. Add tomatoes, broth, garlic and cook until tomatoes are tender, about 10-12 minutes. Do not overcook.
  3. Stir in extra-virgin olive oil and season with salt and pepper.
  4. Transfer to shallow bowl and sprinkle with feta cheese and dill.
  5. Serve warm, or at room temperature.
