- 2 pound sweet potatoes cooked, cut into irregular pieces
- 1/2 cup brown sugar
- 2 tablespoons butter
- 1 1/2 tablespoons cornstarch
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1 cup orange juice prepared is OK
Preparation
- Cut potatoes into irregular bite size pieces and place in 2 quart casserole.
- Mix remaining ingredients in saucepan. Heat and stir until it boils and thickens.
- Pour over potatoes. Cover and bake in 350 degree oven for 20 minutes.
- Remove cover for last few minutes if desired.
