Ingredients

  • 2 pound sweet potatoes cooked, cut into irregular pieces
  • 1/2 cup brown sugar
  • 2 tablespoons butter
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup orange juice prepared is OK

Preparation

  1. Cut potatoes into irregular bite size pieces and place in 2 quart casserole.
  2. Mix remaining ingredients in saucepan. Heat and stir until it boils and thickens.
  3. Pour over potatoes. Cover and bake in 350 degree oven for 20 minutes.
  4. Remove cover for last few minutes if desired.
