- 1 envelope unflavored gelatin
- 1/4 cup cold water
- 1/2 cup boiling water
- 1/2 cup Hellmann's mayonnaise light
- 1 tablespoon fresh lemon juice
- Tabasco dash
- 1/4 teaspoon sweet paprika
- 2 tablespoons dill weed
- 2 cups flaked salmon or a 7 oz. can red sockeye salmon, flaked and boned
- 1 cup heavy cream
Preparation
- Soften gelatin in cold water then stir in boiling water and whisk until gelatin dissolves then cool to room temperature.
- Whisk in mayonnaise, lemon juice, Tabasco, paprika and dill. Stir to blend completely and refrigerate for 20 minutes or until mix starts to thicken slightly.
- Fold in salmon.
- In a separate bowl, whip heavy cream to stiff peaks and fold into salmon mix.
- Transfer to decorative mold, cover and chill for at least 4 hours.
