Ingredients
- 10 pounds tomatoes skinned, somewhat de-seeded, and coarsely diced
- 3 pounds onions coarsely diced
- 3 red peppers coarsely diced
- 3 green peppers coarsely diced
- 1/2 cup parsley chopped fresh
- 1 head garlic chopped fine
- 15 jalapeno peppers deseed most or will be too hot, diced
- 1/2 cup oil
- 2 tablespoons cumin
- 2 teaspoons coriander
- 1/4 cup lemon juice
- 1 cup apple cider vinegar
- 1 teaspoon pepper
- 2 tablespoons salt
- 2 cans tomato paste small cans
Preparation
- Mix together all ingredients.
- Bring to a boil and simmer until well heated through for 10-15 minutes.
- Fill jars, seal, and process in hot water bath for 15 minutes for pints and 20 minutes for quarts.
