Ingredients

  • 10 pounds tomatoes skinned, somewhat de-seeded, and coarsely diced
  • 3 pounds onions coarsely diced
  • 3 red peppers coarsely diced
  • 3 green peppers coarsely diced
  • 1/2 cup parsley chopped fresh
  • 1 head garlic chopped fine
  • 15 jalapeno peppers deseed most or will be too hot, diced
  • 1/2 cup oil
  • 2 tablespoons cumin
  • 2 teaspoons coriander
  • 1/4 cup lemon juice
  • 1 cup apple cider vinegar
  • 1 teaspoon pepper
  • 2 tablespoons salt
  • 2 cans tomato paste small cans

Preparation

  1. Mix together all ingredients.
  2. Bring to a boil and simmer until well heated through for 10-15 minutes.
  3. Fill jars, seal, and process in hot water bath for 15 minutes for pints and 20 minutes for quarts.
