Maple Bourbon Pumpkin Pie

An excellent Thanksgiving dessert with a rich pumpkin filling and a hint of bourbon.

Ingredients

  • 1 can pumpkin canned
  • 1/2 cup maple syrup
  • 1 tablespoon molasses
  • 1 1/4 cup light cream
  • 2 eggs large
  • 2 tablespoon bourbon optional
  • 2 tablespoon flour
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon ground mace

Preparation

  1. Line 9-inch pie plate with pastry. Trim pastry edge leaving 1-inch overhang. Fold overhang under; pinch to form a fluted edge. Chill for 30 minutes.
  2. In large bowl, whisk together pumpkin, maple syrup, molasses, light cream, eggs and bourbon until smooth.
  3. Stir together flour, cinnamon, ginger, mace and nutmeg; add to pumpkin mixture and mix thoroughly.
  4. Pour into pie shell and bake at 400 degrees Fahrenheit for 15 minutes.
  5. Reduce heat to 350 degrees Fahrenheit and bake for an additional 30 minutes or until filling is set and a knife inserted in center comes out clean.
  6. Cool on rack. Garnish with whipped cream if desired.
