An excellent Thanksgiving dessert with a rich pumpkin filling and a hint of bourbon.
Ingredients
- 1 can pumpkin canned
- 1/2 cup maple syrup
- 1 tablespoon molasses
- 1 1/4 cup light cream
- 2 eggs large
- 2 tablespoon bourbon optional
- 2 tablespoon flour
- 1 teaspoon ground cinnamon
- 3/4 teaspoon ground ginger
- 1/4 teaspoon ground nutmeg
- 1/2 teaspoon ground mace
Preparation
- Line 9-inch pie plate with pastry. Trim pastry edge leaving 1-inch overhang. Fold overhang under; pinch to form a fluted edge. Chill for 30 minutes.
- In large bowl, whisk together pumpkin, maple syrup, molasses, light cream, eggs and bourbon until smooth.
- Stir together flour, cinnamon, ginger, mace and nutmeg; add to pumpkin mixture and mix thoroughly.
- Pour into pie shell and bake at 400 degrees Fahrenheit for 15 minutes.
- Reduce heat to 350 degrees Fahrenheit and bake for an additional 30 minutes or until filling is set and a knife inserted in center comes out clean.
- Cool on rack. Garnish with whipped cream if desired.
