Lemon Chicken (Grilled)

Ingredients

  • 3/4 cup lemon juice freshly squeezed
  • 3/4 cup olive oil good
  • 2 teaspoon kosher salt
  • 1 teaspoon black pepper freshly ground
  • 1/2 tablespoon thyme leaves minced fresh
  • 2 pound chicken breasts boneless, skinless, halved

Preparation

  1. Whisk together the lemon juice, olive oil, salt, pepper and thyme.
  2. Pour over chicken breasts in a non-reactive bowl. Cover and marinate in the refrigerator for 6 hours, or overnight. (longer is better!)
  3. Heat charcoal grill and cook the chicken breasts for about 10 minutes on each side, or until just cooked through.
  4. Cool slightly and cut diagonally in 1/2 inch thick slices.
  5. Skewer with wooden sticks.
