Halibut with Lemon-Herb Crust

Ingredients

  • 3/4 cup bread crumbs
  • 2 tablespoons parmesan cheese grated
  • 1 tablespoon lemon zest
  • salt
  • pepper
  • 1 tablespoon butter melted
  • 2 tablespoons Hellman’s mayonnaise
  • 1 tablespoon tarragon fresh, chopped
  • 1 pound halibut fillets skin left on
  • 2 tablespoons lemon juice fresh

Preparation

  1. In a small bowl, combine bread crumbs, parmesan, lemon zest, salt and pepper. Add butter and toss with a fork to form a crumbly mixture.
  2. In another small bowl, combine mayonnaise and tarragon.
  3. Arrange fish, skin side down. Spread each fillet with mayonnaise mixture. Press crumbs mixture into each fillet.
  4. Bake in 400 degree oven until fish flakes, about 10-12 minutes.
  5. OR Preheat BBQ on high for ten minutes. Reduce heat to medium-high. Arrange fillets on BBQ skin side down. Lower lid and cook until fish flakes easily with fork and topping is nicely browned, about 10-12 minutes.
  6. Drizzle lemon juice over each fillet and serve immediately.
