Halibut Kebabs with Grilled Bread and Pancetta

Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon fresh rosemary coarsely chopped
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 1 1/2 pounds halibut boned and skinned, cut into 2-inch chunks
  • 4 cups crusty bread such as ciabatta, cut into 1 1/2-inch cubes
  • 3 ounces pancetta sliced paper-thin

Preparation

  1. Prepare a charcoal or gas grill for medium heat (350 to 450 degrees Fahrenheit).
  2. In a large bowl, combine olive oil, fresh rosemary, salt, and black pepper.
  3. Add halibut and bread cubes, tossing to coat, then set aside for 5 minutes.
  4. Skewer an end of 1 strip of pancetta, then alternate fish and bread cubes on a skewer, weaving pancetta between them.
  5. Repeat with additional skewers.
  6. Grill kebabs, turning often, until fish is cooked through and bread is browned, about 6 minutes.
