A traditional Greek dish featuring lamb marinated with herbs and spices, wrapped and slow-cooked to perfection.
Wash and dry lamb.
Insert garlic in small slits.
Salt and pepper and sprinkle generously with herbs and spices.
Mix oil and lemon juice and drizzle over the lamb.
Cover and marinate for 3 hours, or more.
Preheat oven to 300 degrees Fahrenheit.
Spread out a sheet of parchment paper (or waxed paper) and rub with oil.
Lay marinated meat on paper and arrange cheese on top.
Wrap tightly in paper and then wrap once more in aluminum foil and seal.
Place in a shallow pan and bake for 2-3 hours. Meat should fall off the bone.
