- leg of lamb or shoulder of lamb, or other meaty cut
- 5 tablespoons olive oil 5 tablespoons
- lemon
- garlic
- parsley
- oregano
- cumin
- rosemary
- salt
- pepper
- 1/2 pound feta cheese sliced thickly, 1/2 pound
Preparation
- Wash and dry lamb.
- Insert garlic in small slits.
- Salt and pepper and sprinkle generously with herbs and spices.
- Mix oil and lemon juice and drizzle over the lamb.
- Cover and marinate for 3 hours, or more.

Preparation
- Preheat oven to 300 degrees Fahrenheit.
- Spread out a sheet of parchment paper (or waxed paper) and rub with oil.
- Lay marinated meat on paper and arrange cheese on top.
- Wrap tightly in paper and then wrap once more in aluminum foil and seal.
- Place in a shallow pan and bake for 2-3 hours. Meat should fall off the bone.
