Ingredients

  • 2 cups rice
  • 1/2 cup green pepper chopped
  • 1/2 cup red pepper chopped
  • 1/2 cup onion chopped
  • 1/4 cup celery chopped
  • 2 tablespoons parsley minced
  • 1 clove garlic minced
  • olive oil
  • chicken stock or vegetable stock
  • salt
  • pepper
  • oregano dash
  • thyme dash
  • cumin dash

Preparation

  1. In a large pot, heat the olive oil.
  2. Lightly sauté the green pepper, red pepper, onion, celery, parsley, and garlic.
  3. Add the rice and sauté together for a few minutes.
  4. Add spices and cover with stock.
  5. Cook until the rice is done, ensuring it is light and fluffy but not dry.
  6. When almost done, take the pot off the heat and cover tightly, letting the rice absorb the liquid.
