- 2 cups rice
- 1/2 cup green pepper chopped
- 1/2 cup red pepper chopped
- 1/2 cup onion chopped
- 1/4 cup celery chopped
- 2 tablespoons parsley minced
- 1 clove garlic minced
- olive oil
- chicken stock or vegetable stock
- salt
- pepper
- oregano dash
- thyme dash
- cumin dash
Preparation
- In a large pot, heat the olive oil.
- Lightly sauté the green pepper, red pepper, onion, celery, parsley, and garlic.
- Add the rice and sauté together for a few minutes.
- Add spices and cover with stock.
- Cook until the rice is done, ensuring it is light and fluffy but not dry.
- When almost done, take the pot off the heat and cover tightly, letting the rice absorb the liquid.
