Dressing

Ingredients

  • 2 tablespoons lemon juice
  • 2 teaspoons dijon mustard
  • 1 small garlic clove minced
  • 2 teaspoons honey
  • 1 tablespoon fresh dill finely chopped
  • 1/4 cup feta crumbled
  • 1/3 cup olive oil
  • salt and pepper

Preparation

  1. To make the dressing, whisk together the lemon juice, dijon mustard, garlic, honey, dill, feta, and olive oil.
  2. Season well with salt and pepper.
  3. Add the spinach and arugula with the red onion, sun-dried tomatoes, and the dressing.
  4. Toss well and top with the pine nuts and extra feta, if desired.
