Dressing
Ingredients
- 2 tablespoons lemon juice
- 2 teaspoons dijon mustard
- 1 small garlic clove minced
- 2 teaspoons honey
- 1 tablespoon fresh dill finely chopped
- 1/4 cup feta crumbled
- 1/3 cup olive oil
- salt and pepper
Preparation
- To make the dressing, whisk together the lemon juice, dijon mustard, garlic, honey, dill, feta, and olive oil.
- Season well with salt and pepper.
- Add the spinach and arugula with the red onion, sun-dried tomatoes, and the dressing.
- Toss well and top with the pine nuts and extra feta, if desired.
