Ingredients
- 4 chicken breasts boneless skinless
- 2 tablespoons vegetable oil
- 1 cup plain croutons
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 2 tomatoes sliced
- 1 cup Monterey Jack cheese shredded
Preparation
- Preheat oven to 350°F. Coat a rectangular, 2 quart baking dish with nonstick cooking spray; set aside.
- In a large skillet heat oil over medium-high heat. Add chicken to skillet; cook and stir until browned.
- Place chicken in baking dish. Sprinkle with croutons, oregano and pepper; arrange tomatoes on top.
- Tightly cover baking dish with foil. Bake for 15 minutes.
- Remove foil; sprinkle with cheese. Bake 5 minutes more or until cheese melts and chicken is no longer pink (165°F). Serve warm.
