Nana's Risotto ('Orange Rice')

Ingredients

  • 1/2 cup onion chopped
  • 1 garlic clove minced
  • 1 tablespoon butter
  • 1 cup rice
  • 2 cups water
  • 1 can tomato paste 5.5 ounces / 156 mL
  • 1 cup cheddar cheese

Preparation

  1. Sauté onion in butter until translucent.
  2. Add garlic and cook briefly.
  3. Add rice and water, season with salt and pepper (carefully - don't over season).
  4. When almost cooked, add can of tomato paste and cheddar cheese.
  5. Simmer until cooked.
  6. Serve with fried onions on top - just like Nana - and Mom - would!
