Pineapple Fried Rice (Thai)

Terrific side dish option with a tropical or summer flair! This is a Thai dish made with a classic Thai Fried Rice Sauce.

Ingredients

  • 2 tablespoons vegetable oil
  • 2 cloves garlic finely minced
  • 1/2 onion finely chopped
  • 3/4 cups red capsicum / bell peppers diced
  • 1/2 cups peas frozen
  • 3 cups jasmine rice day old, cooked
  • 1 3/8 cups pineapple pieces fresh or canned, drained
  • 1/2 cups green onion sliced
  • 1 tablespoons oyster sauce
  • 1 1/2 tablespoons fish sauce
  • 1/2 teaspoons sugar

Preparation

  1. Heat oil in a wok or large non-stick skillet over high heat.
  2. Add garlic and onion, cook for 1 minute.
  3. Add capsicum, cook for 1 minute.
  4. Add peas, stir for 30 seconds.
  5. Add rice and Sauce ingredients of choice. Cook, stirring constantly, for 2 minutes or until rice grains go from being wet with sauce to sort of caramelised.
  6. Add pineapple, stir for just 30 seconds to warm through.
  7. Stir through green onions then serve!
