Ingredients

  • 5 green onions
  • 2 ribs celery chopped
  • 1 garlic minced
  • 1 tsp butter
  • 3 large potatoes peeled and cut into ½ inch cubes
  • 2 cups ham cooked, chopped
  • 10 oz can mushroom soup
  • 1/4 cup sour cream or yogurt
  • 1 tsp thyme
  • ginger dash
  • 3/4-1 cup cheddar cheese grated

Preparation

  1. Preheat oven to 350 F.
  2. Sauté onions, celery and garlic in butter in a skillet until soft.
  3. Put the potatoes in a greased 2 quart casserole dish.
  4. Add ham, soup, sour cream, thyme and ginger.
  5. Stir until well blended.
  6. Stir in onion and celery.
  7. Cover and bake about 1 hour.
  8. Sprinkle cheese on top and bake uncovered for 10 more minutes.
