Ingredients

  • 6 medium beets sliced and cut into small pieces about one inch long
  • 2 medium potatoes chopped
  • 2 medium onions chopped
  • 2 carrots chopped
  • 2 cloves garlic chopped
  • 1/2 cabbage small, chopped
  • 1/2 cup tomato juice or soup
  • 1 pound spare ribs or pork bones
  • 1/4 cup fresh dill chopped
  • 1 cup country cream
  • 3 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 cup green beans
  • 3 bay leaves
  • 2 tablespoons salt to taste
  • 1/2 tsp pepper

Preparation

  1. Slice and cut beets into small pieces about one inch long.
  2. Add chopped potato, carrot, onion, and garlic. Place in large pot with ribs. Cover with cold water, until it is about 2 1/2 inches above the ingredients. Bring to boil skimming continuously until clear.
  3. Add one tablespoon vinegar, bay leaves, salt, and pepper. More salt and pepper may be needed, use according to taste, leave to boil slowly.
  4. In a separate pot cook chopped cabbage until it comes to a boiling point. Drain well, add to beets. When using frozen beans, cook in separate pot before adding to ingredients. Boil for 2 hours.
  5. Add tomato juice, remaining vinegar and dill. Boil for another 15 minutes. Remove from heat and add cream. (We add cream at the table, either sour cream or whipping cream.)
