Ingredients
- 2 tablespoons oil
- 3/4 pound chicken boneless skinless, cut into thin strips
- 3 cloves garlic minced
- 1 carrot thinly sliced
- 1 onion thinly sliced
- 2 bell pepper red and yellow, thinly sliced
- 540 mL diced tomatoes undrained
- 1/4 teaspoon salt
- 1/2 teaspoon pepper or more to make more spicy
- 1/2 pound linguine pasta fine
- 1/3 cup parmesan cheese grated
Preparation
- Heat oil in large fry pan on medium-high heat. Add chicken and garlic; cook until chicken is cooked through, stirring frequently.
- Add carrots, onion, bell peppers, tomatoes, salt, and pepper; stir. Bring to boil. Reduce heat to medium-low; simmer until vegetables are crisp tender.
- Meanwhile, bring a large pot of water to a boil. Add pasta and cook until tender.
- Stir half of the cheese into sauce; spoon over drained pasta. Top with remaining cheese.
