Store leftovers in an airtight container in the fridge and reheat gently over low heat. You can substitute spinach, kale, or zucchini for extra veggies or swap ditalini pasta for small shells or elbow macaroni.
1 can petite diced tomatoes drained, 14.5 ounce can
1 cup ditalini pasta
1 teaspoon Italian seasoning
4 ounces cream cheese softened and cubed
1/2 cup Parmesan cheese freshly grated
1/2 cup heavy cream
salt
black pepper freshly ground
parsley chopped, for garnish
Preparation
Sauté the Sausage and Vegetables: Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it into small pieces, and cook until browned. Add diced onion and sauté until translucent, about 3-4 minutes. Stir in garlic and cook for an additional minute.
Add Broth and Tomatoes: Pour in chicken broth and add drained diced tomatoes. Stir in Italian seasoning, salt, and pepper. Bring the mixture to a boil.
Cook the Pasta: Once boiling, add the ditalini pasta. Lower the heat to a simmer and cook for 8-10 minutes, stirring occasionally, until the pasta is al dente.
Incorporate Cream and Cheese: Stir in softened cream cheese until fully melted. Add heavy cream and Parmesan cheese, stirring until the soup is creamy and the cheese is melted.
Adjust and Serve: Taste and adjust seasoning as needed. Ladle soup into bowls, garnish with chopped parsley, and serve warm.
