Ingredients

  • 1 loaf French bread cut into ΒΌ-inch slices
  • 1 tablespoon extra-virgin olive oil for brushing
  • 8 roma (plum) tomatoes diced
  • 1/3 cup fresh basil chopped
  • 1 ounce Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 1 tablespoon balsamic vinegar good quality
  • 2 teaspoons extra-virgin olive oil for mixing
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper

Preparation

  1. Gather all ingredients.
  2. Preheat the oven to 400 degrees F (200 degrees C).
  3. Brush bread slices on both sides lightly with 1 tablespoon oil and place on large baking sheet.
  4. Toast bread until golden, about 5 to 10 minutes, turning halfway through.
  5. Meanwhile, toss together tomatoes, basil, Parmesan cheese, and garlic in a bowl.
  6. Mix in balsamic vinegar, 2 teaspoons olive oil, kosher salt, and pepper.
  7. Spoon tomato mixture onto toasted bread slices.
  8. Serve immediately and enjoy!
