Cookies

Ingredients

  • 1 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup butter
  • 2 eggs
  • 1 teaspoon vanilla
  • 3 cups quick cooking oats

Preparation

  1. Sift together flour, baking soda, and salt.
  2. In a separate bowl, mix together sugar, brown sugar, and butter.
  3. Add eggs and vanilla to the sugar mixture and blend well.
  4. Add the sifted dry ingredients to the wet mixture and mix well.
  5. Stir in quick cooking oats.
  6. Bake at 350 degrees Fahrenheit for 8 minutes.
  7. Remove from oven and put sand ½ teaspoon topping in center of each cookie, pressing slightly.
  8. Bake for an additional 6 minutes.

Topping

Ingredients

  • 2/3 cups sugar
  • 1/2 cups butter
  • 2 tablespoons light corn syrup
  • 1/4 cup almonds
  • 1/2 tsp almond extract

Preparation

  1. Bring to a boil sugar, butter, and light corn syrup.
  2. Remove from heat and stir in chopped almonds and almond extract.
