Ingredients

  • 3/4 links Italian sausage links
  • 2 pounds fresh spinach cook/drain
  • 1/19 ounces white kidney beans rinsed/drained
  • 1 onion finely chopped
  • 3/4 cup evaporated skim milk
  • 1/2 cup grated parmesan romano
  • 1 teaspoon finely shredded lemon peel
  • 1 tablespoon lemon juice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon pepper
  • 1/3 cup fine dry breadcrumbs
  • 2 cloves minced garlic
  • 4 tsp melted garlic

Preparation

  1. Cook the Italian sausage links until browned, then slice them.
  2. In a large pot, cook and drain the fresh spinach, then add the rinsed white kidney beans.
  3. Add the chopped onion and sauté until translucent.
  4. Stir in the evaporated skim milk, grated parmesan romano, lemon peel, lemon juice, nutmeg, and pepper.
  5. Combine the sausage with the spinach mixture and mix well.
  6. Transfer to a baking dish and top with fine dry breadcrumbs.
  7. Bake until heated through and breadcrumbs are golden.
