Ingredients
- 3/4 links Italian sausage links
- 2 pounds fresh spinach cook/drain
- 1/19 ounces white kidney beans rinsed/drained
- 1 onion finely chopped
- 3/4 cup evaporated skim milk
- 1/2 cup grated parmesan romano
- 1 teaspoon finely shredded lemon peel
- 1 tablespoon lemon juice
- 1/4 teaspoon nutmeg
- 1/4 teaspoon pepper
- 1/3 cup fine dry breadcrumbs
- 2 cloves minced garlic
- 4 tsp melted garlic
Preparation
- Cook the Italian sausage links until browned, then slice them.
- In a large pot, cook and drain the fresh spinach, then add the rinsed white kidney beans.
- Add the chopped onion and sauté until translucent.
- Stir in the evaporated skim milk, grated parmesan romano, lemon peel, lemon juice, nutmeg, and pepper.
- Combine the sausage with the spinach mixture and mix well.
- Transfer to a baking dish and top with fine dry breadcrumbs.
- Bake until heated through and breadcrumbs are golden.
