Ingredients
- 1 eggplant medium
- 1 cup cracker crumbs
- 1 egg
- 1/4 cup butter melted
- 3/4 cup cheddar cheese grated
- salt
- black pepper
Preparation
- Prepare the eggplant by slicing and cooking until tender.
- In a bowl, combine the cooked eggplant, cracker crumbs, egg, melted butter, and cheddar cheese.
- Season with salt and black pepper to taste.
- Transfer the mixture to a baking dish and bake until heated through and cheese is bubbly.
- peel & quarter eggplant. Cook until done in small amount of water, drain and mash
- add all other ingredients reserving 1/4 cup cheese
- bake in buttered casserole dish @ 350 about 30 minutes. Sprinkle reserved cheese on top and melt in oven & serve.
