Ingredients

  • 1 eggplant medium
  • 1 cup cracker crumbs
  • 1 egg
  • 1/4 cup butter melted
  • 3/4 cup cheddar cheese grated
  • salt
  • black pepper

Preparation

  1. Prepare the eggplant by slicing and cooking until tender.
  2. In a bowl, combine the cooked eggplant, cracker crumbs, egg, melted butter, and cheddar cheese.
  3. Season with salt and black pepper to taste.
  4. Transfer the mixture to a baking dish and bake until heated through and cheese is bubbly.
  5. peel & quarter eggplant. Cook until done in small amount of water, drain and mash
  6. add all other ingredients reserving 1/4 cup cheese
  7. bake in buttered casserole dish @ 350 about 30 minutes. Sprinkle reserved cheese on top and melt in oven & serve.
