Ingredients

  • 1 tablespoon fat
  • 1 tablespoon flour
  • 1 pound ham cooked & chopped
  • 1 cup shrimp cooked
  • 1 1/2 cups cooked tomatoes
  • 1 onion sliced
  • 1 red pepper chopped
  • 1 gr green pepper chopped
  • 1 clove garlic minced
  • 1 teaspoon parsley chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon Worcestershire sauce
  • 1/4 teaspoon thyme dried
  • 4 cups water
  • 1 cup uncooked rice

Preparation

  1. Melt fat and add flour, stirring until smooth and slightly brown.
  2. Add chopped ham, shrimp, tomatoes and cook for 3 minutes.
  3. Add onions, seasoning and water, simmer for 10 minutes.
  4. Add rice and boil until tender, about 30 minutes. The mixture should not be stirred, although it may be necessary to lift it from the bottom of the kettle from time to time. Keep covered during cooking.
