Oat and Banana Pancakes

Nancy made a batch of them to send hunting with Jim (he left today). Jim loves them – also plain with no syrup, etc., i.e., eat out of hand. Jim's have chocolate chips, but Nancy doesn't put the chips in when making for the kids.

Ingredients

  • 1 cup old fashioned oats
  • 1/4 cup spelt flour or regular flour
  • 1/4 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon ground cinnamon
  • 2 eggs
  • 3/4 cup plain Greek-style yogurt
  • 1/2 teaspoon vanilla extract
  • 2 ripe bananas
  • 1/2 cup dark chocolate chips or not
  • 4 tablespoons butter

Preparation

  1. In a large mixing bowl, combine oats, flour, sugar, baking soda, baking powder as well as cinnamon and whisk to combine. In a separate bowl whisk eggs, yogurt and vanilla. Combine yogurt mixture with dry ingredients and then fold in bananas.
  2. Heat 1 tablespoon of butter in a large skillet over medium heat. Pour -1/4 cup batter into pan, working in batches. Cook pancakes until bubbles appear on top and the underside is golden brown and firm. Flip and cook another 1 to 2 minutes. Add another tablespoon of butter to pan between batches and work until batter is finished. Keep cooked pancakes in a warm oven. Serve with warm maple syrup, agave or honey.
