White Bean with Thai Basil and Chicken Chilli

Ingredients

  • 1/4 cups butter
  • 1 cup chopped red pepper
  • 1/2 cup carrot
  • 1 cup onion
  • 2 tablespoons minced garlic
  • 1 liter chicken broth
  • 2 cups chopped chicken meat
  • 1 cup tomato
  • 4 cups white beans (cooked)
  • chili powder
  • cumin
  • oregano
  • red chili flakes
  • 1/2 lime
  • Thai basil
  • cilantro

Preparation

  1. Melt butter in a pan.
  2. Add chopped red pepper, carrot, and onion; sauté for 2-3 minutes.
  3. Stir in minced garlic and add chip broth.
  4. Add chopped chard and tomato.
  5. Mix in white beans and season with chili powder, cumin, oregano, and red chili flakes.
  6. Squeeze in lime juice and add chopped Thai basil and cilantro before serving.
