Ingredients

  • 1/2 cups oil
  • 1 1/4 cups sugar white sugar
  • 2 eggs
  • 1 cups sour milk (any kind)
  • 4 cups apples peeled and thinly sliced
  • 2 1/2 cups GF Baking Mix gluten-free baking mix
  • 1/3 cups sugar for batter
  • 1 tsp salt
  • 1 tsp xanthan gum
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon

Preparation

  1. Beat together oil, sugar and eggs until light in colour.
  2. Add milk. Combine flour, baking powder, baking soda, salt and xanthan. Add to mixer and beat well.
  3. Combine apples, sugar and cinnamon; mix well.
  4. Grease and flour a Bundt pan. Spoon half the batter into the bottom of a well-greased Bundt pan. Spoon half the apple mixture evenly over batter.
  5. Spoon in remaining apples and any liquid. Cover with remaining batter and smooth the top.
  6. Bake in 350°F oven for 50-60 minutes. Cool 10 minutes in pan before turning out onto a rack to cool.
